The environmental lapse rate is $\Gamma = -\mathrm dT/\mathrm dz$ , the rate at which the temperature of the air at rest decreases with height, as a sounding measures it. The dry adiabatic lapse rate $\Gamma_d$ is the rate at which the temperature of a parcel of unsaturated air decreases as the parcel is lifted.
